I suggest you look into firewire enclosures or build a cheap fileserver linked to your drives.
In the case of the latter, it's common to run a fileserver with a micro-ATX motherboard and a copy of linux on a flash device inside the case so you can quickly exchange OS without any risk to your data.
I can tell you from experience this pays off: Mobile fileservers take enough rough and tumble and it's surprisingly easy to drop a drive off a desk and ruin a few crucial sectors and bork most of your data.
